The Winnow System has reduced food wastage for The Business Sofitel Bangkok Sukhumvit, a luxury five-star hotel centrally located in the heart of Bangkok's business, shopping and entertainment district.
For the pilot, Winnow installed two machines in the all-day dining restaurant of the hotel for measuring food waste.
This initiative was successful and Sofitel achieved great results after 15 weeks of operation. The hotel has been successful in reducing the average waste by value by 50 percent from the start point.
This would lead to about US$60,000 annual savings per year for the hotel.
"Using Winnow I can reduce my food waste and better control production, which means significant cost reductions. It is easy to use which is essential when you have to train staff," said Jeremy Cayron, executive chef Sofitel Bangkok Sukhumvit. "A special mention has to be given to the outstanding customer support."
Reduction of waste is not the only benefit for Winnow's pilot at Sofitel as this also helped raise awareness of food waste to the kitchen team.
The most engaged employees are rewarded with a Food Waste Champion certificate and a badge they can wear with their Uniform.
Encouraged by the success of this pilot, Sofitel Bangkok management has decided to shortly integrate a new Winnow System for their banqueting area.
